  • DRESSING//
  • 1 large orange (juiced + zest)
  • 2 Tablespoons raw apple cider vinegar
  • 2 Tablespoons coconut nectar, or stevia to taste
  • 1/4 teaspoon fine sea salt
  • 2 Tablespoons extra virgin olive oil
  • SALAD//
  • 4 celery stalks
  • 1 pint blueberries
  • 1 green apple
  • 1 cup walnuts
  • 4 cup spring mix salad
  • 3 tablespoons hempseed

Instructions

  1. First, you’ll want to prep all your produce by thoroughly washing and rinsing.
  2. In a large bowl, combine all the ingredients (except for the dressing) and stir until everything is evenly spread out.
  3. For the dressing, simply add all the ingredients into a blender or food processor and pulse until combined. You may also just use a small bowl and a whisk.
  4. Pour the dressing over the salad and mix until all the ingredients are coated in the dressing. You may also keep the dressing separate until serving for later.
  5. Enjoy at room temperature/chilled.
  6. For meal prep, layer ingredients similar to that shown in the picture above starting will dressing, then celery, green apple, blueberries, walnuts and spring mix.
  7. Store in the fridge for up to 5-7 days.
