The classic hummus recipe is perfect for potlucks or parties. Enjoy it with some fresh cut veggies or pita chips.

Ingredients

  • 1 cup chickpeas (dry) or 2 cups cooked
  • 1/2 cup water
  • 1/3 tahini
  • 2 Tbsp olive oil
  • 1/2 Tbsp Himalayan Sea Salt
  • 2 lemons (squeezed)
  • 2 garlic cloves
  • 1/2 tsp cumin

Instructions

  1. Soak chickpeas overnight.
  2. In a medium pot, add 4 cups of water and bring to a boil, then add soaked chickpeas. (Add more water if needed)
  3. At medium temperature, bring chickpeas to a boil for an hour and a half, then reduce to a low temperature for 30 minutes.
  4. Drain chickpeas, saving one cup of it water for hummus. (1 cup dried yields 2 cups cooked)
  5. In a blender or food processor add chickpeas, tahini, water, olive oil, sea salt, garlic, lemon juice, cumin. Pulse until smooth and creamy!

Notes

  • Fresh chickpeas hold more nutrients and are much more flavorful, but this recipe also works with canned chickpeas.
  • This hummus recipe is perfect for freezing, double the ingredients and make prepackaged snacks for weeks!
