10 minute, 1-pot, immune boosting miso soup. A healthy plant-based soup.

Ingredients

Scale
  • 4 cups water or vegetable broth
  • 2 tablespoons miso paste
  • 1 bunch green onions (chopped)
  • 6 nori sheets
  • 4 garlic cloves
  • 2 tablespoons grated ginger
  • 1 teaspoon red pepper chili flakes
  • 1 cup tofu (chopped into 1 in. cubes)

Instructions

  1. Place water or vegetable broth in a medium sauce pan and bring to a low simmer.
  2. In the meantime, place 3 Tbsp of miso into a small bowl, add a little hot water and whisk until smooth. Then add to the soup and stir. This will ensure it doesn’t clump.
  3. Add chopped ingredients to the pot and cook for 5 minutes or so.
  4. Remove from heat and last add in sliced nori sheets, mix well.
  5. Taste and add more miso or a pinch of sea salt if desired. Serve warm.
