Simple raw vegan (no-bake) fruit tarts with a date-walnut crust and creamy, dairy-free yogurt filling. Yum!

Ingredients

Scale

Crust

  • 1/2 cup walnuts
  • 1/4 cup shredded coconuts
  • 1/4 cup pumpkin seeds
  • 1 cup dates
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Filling

  • 1/2 cup coconut yogurt

Fruit Topping

  • Blueberries
  • Kiwi
  • Strawberries
  • Pineapple

Instructions

  1. In a food processor combine walnuts, shredded coconut, and pumpkin seed and blend until finely chopped.
  2. Then add dates, cinnamon, and vanilla. Pulse until a dough-like consistency. Mold into the pie dish.
  3. Add 2-3 tablespoons of coconut yogurt and top with fruit. Set in the freezer for 1 hour. Enjoy cold!
