This raw vegan pecan pie is both easy to make and rich in flavor. Perfect for the holiday feasting.

Ingredients

Crust

  • 1 cup almond
  • 1/2 cup pecan
  • 68 dates
  • 1/4 cup shredded coconut
  • 1 tsp cinnamon

Filling

  • 1 1/2 cup pecans
  • 1 1/2 cup dates (soaked)
  • 1/4 cup date water
  • 4 tbsp coconut oil
  • 2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • pinch of salt

Instructions

Crust

  1. In a high-speed blender combine almonds, pecans, dates, shredded coconut, and cinnamon.
  2. Blend ingredients until you reach a dough-like consistency.
  3. Mold dough into pie dish and place in the fridge for filling.

Filling

  1. In your high-speed blender combine 1/2 cup pecans, dates, water, coconut oil, vanilla extract, and cinnamon & nutmeg seasoning.
  2. Blend until smooth and creamy.
  3. With a spoon mix in another 1/2 cup crushed pecans.
  4. Pour mix into pie dish and sprinkle remaining 1/2 cup pecan on top.
  5. Place in fridge for 2 hours to set. Enjoy at room temperature!

Notes

Double the recipe if using a 9 inch pie crush. Serves 12
