Easy Wild Rice Stuffing

This recipe is perfect for stuffing almost anything or as a side or even just as is. I created this recipe for our Thanksgiving feast but now my children request it all year round. Enjoy it with the ones you love!

Ingredients

  • 2 cups wild rice
  • 3 cups vegetable broth
  • 2 cups carrots (chopped)
  • 2 cups celery (chopped)
  • 2 cups onion (chopped)
  • 2 garlic cloves (chopped)
  • 2 tbs coconut oil
  • 1 tbs Himalayan sea salt
  • 1 tsp black pepper
  • 1/4 tsp nutmeg

Instructions

  1. In a large pan melt coconut oil over medium heat.
  2. Add your rice and sauté for a few minutes.
  3. Then add your chopped carrots, celery, onions, and garlic and mix all your ingredients together. Then add your seasoning and sauté again for about 3-5 minutes.
  4. Add 3 cups vegetable broth, cover your pan and simmer for 20 min on medium-low heat or until rice is tender.
  5. Allow time to cool before stuffing.

Notes

This recipe is super easy especially if you use your food processor to chop all your ingredients. Cook at medium to low heat so that your rice doesn’t stick to your pan. Makes for easy cleanup.
