I hope you all enjoyed the beautiful weekend. The weather here in Houston was amazing, not too hot, not too cold, nice, and sunny. Pretty & perfect! On days like that, we can’t help but be outside, checking out the farmer’s markets, or hanging out at the park. Springtime is here and I’m definitely looking forward to more days like that.
Easy Avocado Radish Toast Recipe
As a mom, it’s a process of trial and error to find a variety of lunches that are 1) simple, 2) healthy, and 3) satisfying. When we first made the switch to plant-based eating, I made plenty of mistakes. But the one that was always a success was avocado toast. There are of course many varieties like the Sweet & Spicy Avocado Toast version I post a few months back but one that I’ve recently been enjoying is this avocado radish toast with sprouts.
We love this avocado radish toast recipe because it’s super easy to make and perfect for a quick meal. We usually make it for lunch since I’m BIG on smoothies for breakfast but really it can be used as a quick breakfast, snack, lunch, or even dinner recipe with some tempeh on the side.

Avocado toast is the simplest and best of toasts, perfect for a quick breakfast, snack, lunch or dinner.

Ingredients
- Bread
- Avocado
- Lemon or lime juice (optional but recommended)
- Sliced radishes
- Sprouts
- Pinch of salt
Instructions
- Toast your slices of bread.
- Put the avocado in a bowl and mash it up with a fork. Mix in a squeeze of lemon or lime (optional).
- Place mashed avocado on top of your toast and top it with a light sprinkle of Himalayan sea salt (mandatory!).
- Top it with sliced radishes and sprouts. Enjoy!
Notes
Mashed avocado is way better than sliced avocado in this recipe. I don’t know why but it just is.
