This is for all the hummus lovers out there!!! If you’re wanting something savory with tons of jam-packed nutrients, this is the recipe for you. My family absolutely loves this salad, especially my husband, he’s always bugging me to make it for him.  This one is great because you can store it in the freezer and use it on those busy days when dinner is the last thing on your list.
Mediterranean Kale & Quinoa Salad
It’s also a great dish to take to parties or potlucks, as a side salad or even a filling for lettuce wraps. You can even get a bit creative and use this for stuffed bell peppers, yum!

A delicious salad with a creamy hummus base. Nutrient dense and easy to make.

Ingredients
- 1 bunch kale
- 1 cup quinoa (dried)
- 2 red bell peppers
- 2 bunch green onion
- 5 lemons
- 2 cups of your favorite Hummus
- 1 Tbs Himalayan Sea Salt
Instructions
- Rinse and cook your quinoa. Set aside and let cool.
- Place your kale into your food processor and pulse until finely chopped.
- Chop red bell peppers and green onion into small bite size pieces and add ingredients into a large mixing bowl. Add lemon juice, hummus, and salt & pepper.
- Mix ingredients together. Enjoy!
Notes
When mixing ingredients together, be careful to not over mix. You don’t want to smash your quinoa. This salad can be eaten cold or warm.
