I’m about to share with you one of the best desserts I’ve ever made, yes, that’s right! It’s one of the best because it is completely raw, dairy-free, gluten-free, refined sugar-free, and tastes so good. To anyone who wants something easy, healthy, and delicious to satisfy their sweet tooth, this is your answer. Raw Vegan Peanut Butter Snickers Bars

These vegan Snickers bars have some serious wow factor! My only regret about this recipe is that I did not make it sooner. Snickers Bars were a favorite growing up, and I will admit that I missed them a little when I went vegan. Thankfully  I don’t have to worry about that anymore — now that I know how simple these are to make.

This recipe also only requires 20 minutes or less of work on your end, and if you use Enjoy Life chocolate chips as I did then it will be a whole lot easier. Although I have a great chocolate sauce recipe that tastes just as good as the chocolate chips.

From the start, I knew how I wanted to make the caramel. I really wanted to use one of my favorite date caramel recipes as it’s so simple and has a gooey texture similar to that in Snickers bars. All you need is to mix 3-ingredients in a bender! And the thought of this caramel with some salty peanuts was just super appealing.

Traditional Snickers Bars are NOT gluten-free. However, these raw vegan Snickers bars ARE gluten-free.

Have a look at the ingredients for it…it’s NOT the pillar of health. But these will blow you away with how good they taste, never would you have thought that these could be made with such wholesome ingredients.

Ingredients

Scale
  • For the base
  • 2/3 cup shredded coconut
  • 1/4 cup coconut oil
  • 2 tbsp maple syrup
  • pinch of pink Himalayan sea salt
  • For the peanut butter caramel
  • 1 cup pitted Medjool dates, soaked in hot water for 30 minutes
  • 1 tbsp peanut butter
  • 1/2 cup melted coconut butter
  • 1/4 cup coconut oil
  • 1/2 tsp vanilla extract
  • pinch of pink Himalayan sea salt
  • For the chocolate
  • 1/2 cup melted coconut oil
  • 1/4 cup cacao butter
  • 4 tbsp raw cacao powder
  • 4 tbsp maple syrup

Instructions

  1. For the base
  2. In a food processor, process the shredded coconut, coconut oil, maple, and salt until all ingredients are broken down into a flour-like consistency.
  3. For the peanut butter caramel
  4. Press out into a parchment-lined 8×8 baking dish and smooth down. Place into the freezer to set.
  5. Melt the coconut butter and then pour into your high speed blender with Medjool dates, peanut butter, coconut oil, vanilla extract and sea salt. Blend until all ingredients are smooth.
  6. Pour this out on top of the base and smooth down. Then add the peanuts and gently press down with a spoon pressing them into the caramel. Place into the freezer to set.
  7. For the chocolate
  8. Heat coconut oil, cacao butter in a saucepan over low heat until completely melted. Add in cacao powder and maple syrup and whisk together until fully mixed.
  9. Pour chocolate evenly on top of the caramel. Place back in the freezer for at least 2 hours. Remove from the freezer and let thaw for 30 minutes before cutting into slices. Cut upside down to avoid smashing the filling.
  10. Eat within 15-20 minutes after removing from the freezer! Store in the fridge for up to a week, freezer for 3-4 weeks.
