It’s getting hotter every day here in Houston.  Maybe I notice it more now that the air conditioner in my car is no longer working.  Yeah, that’s right!  I thought Houston traffic was bad, try sitting in it with no a/c. No worries, I’m getting it fixed right away. Luckily I had this for lunch to keep me hydrated and refreshed. An easy cucumber and tomato salad recipe, perfect for these hot summer days.

Easy Cucumber & Tomato Salad Recipe

Something I also noticed about this heat is that I’m craving more raw foods.  Watermelons, tomatoes, cucumber, pineapple, cantaloupe, and of course figs are a lot of my summer favorites.  The sad thing is that my farmers market is closing for a few months.  So my husband and I did what any high-raw vegan would do.  We went and bought as much as we could of all the things we love.

We have been putting to good use all their amazing produce.  One being this awesome salad!!!  It’s so simple and refreshing, perfect to beat the scorching summer heat, and it gets better as it sits!

Easy Cucumber & Tomato Salad

An easy and refreshing cucumber and tomato salad. Perfect for the hot summer days!

Ingredients

Scale
  • 2 cucumbers
  • 2 large tomatoes
  • 1/2 red onion
  • 2 lemons
  • 1 tbsp olive oil
  • 1 tsp Himalayan Sea Salt
  • 1 tsp Black pepper
  • 2 tbsp dried basil

Instructions

  1. In a large mixing bowl, add in the chopped cucumber, red onion, & tomatoes.
  2. Then add in the lemon juice, olive oil, salt & pepper and dried basil and mix well.
  3. Allow time to sit in fridge. Enjoy!

Notes

Allowing it to sit over night helps to blend the flavors together. You can serve this salad cold for a refreshing lunch!
