The Mediterranean diet is one that a lot of doctors recommend eating, mainly because it’s primarily filled with plant foods, such as fruits, vegetables, whole grains, legumes, and nuts.

Mediterranean Toast

After my obsession with my Sweet & Spicy Avocado Toast, I wanted to see if I could create something just as satisfying to eat but with the Mediterranean feel. Since I’m a BIG fan of hummus and just made a big batch of my classic hummus recipe, I thought to get a little more creative, so here is the Mediterranean Toast. I usually just use hummus as a dip for my veggies, but this is another easy and, of course, tasty way to enjoy it!

Diet is all about balance and choosing the most nutritious choices for your body. Bread isn’t something I indulge in often, but I do like to live a little and have my occasional bread. For this recipe, I used Ezekiel bread!

This toast is perfect to use as a snack or after a workout for extra protein and nutrient-dense carbohydrates.

Ingredients

Scale
  • 1 slice of bread (toasted)
  • 2 Tbsp Hummus
  • 46 slices of cucumber
  • 2 slices of tomato
  • Squeeze of Lemon
  • Salt & Pepper

Instructions

  1. After toasting your bread, spread hummus lightly over bread.
  2. Add sliced cucumbers and grilled tomato.
  3. Lightly squeeze lemon juice and add a dash of salt & pepper. Enjoy!

I use my classic hummus recipe for this snack!
